Ingredients

  • 8 slices bacon

  • 1 onion, chopped

  • 16 ounce can black eyed peas, drained

  • 14 ½ ounce can stewed tomatoes, undrained & chopped

  • 2 cups Andy’s Santee Gold Rice, cooked per package instructions

  • ¼ teaspoon hot sauce

  • 1/8 teaspoon garlic powder

  • 1/8 teaspoon pepper

Directions

  1. Cook bacon, crumble and set aside, reserving drippings.

  2. Sauté onion in bacon drippings until tender. Drain onion, discard drippings and return onion to skillet.

  3. Add the rest of ingredients except bacon, cover and simmer 8-10 minutes.

  4. Spoon into serving dish; sprinkle bacon over top.
